تقيس مقاييس الحمض إجمالي الحمض في العصائر.أما حمض الليومون فهو حمض رئيسي بالنسبة للحمضيات، طماطم و أجاص.وأما حمض الطرطريك فهو حمض رئيسي بالنسبة لللأعناب. هناك توجد أحماض أخرى كحمض التفاح.
يقيس مقياس الحممض إجمالي حمض العينة ويغيره إاى تركيز حمض الليمون أو حمض الطرطيك كل واحد. مقياس الحمض "الجيبي"  1 يقيس بإجتمالي حمض الليمون و مقياس الحمض "الجيبي" 2 يقيس بإجتمالي حمض الطرطريك.
